Rosso 25 is produced with a meticulous winemaking method that combines tradition and innovation.
The grapes, harvested by hand, undergo pressing and maceration in stainless steel for 25-40 days.
Malolactic fermentation also takes place in stainless steel, ensuring a solid structure and complex aromas.
Subsequently, the wine is refined in glass-lined concrete and in medium-toasted barriques for at least 6 months, followed by refinement in the bottle for at least 4 months.
This process gives Rosso 25 its complexity and depth of flavor.
The vineyard from which Rosso 25 comes is located on the hills of Imola, at an altitude of 125 meters above sea level.
The medium-textured clay soil and southern exposure create an ideal microclimate for growing vines.
Planted between 1972 and 2010, the vineyards are trained using the spurred cordon system with a density of 2500 plants per hectare and an annual production of 50-60 quintals per hectare.
This environment favors the production of high quality grapes, which gives life to a structured and aromatic wine.
