Amantiglio produced through a winemaking process that combines tradition and attention to detail.
The Sangiovese grapes, harvested exclusively by hand, are pressed and macerated in stainless steel for 30-40 days.
Malolactic fermentation takes place entirely in stainless steel, preserving the structure of the wine and developing complex aromas.
After this phase, the wine is refined in glass-lined concrete and large barrels for at least two years, followed by further refinement in the bottle for at least 12 months.
This long maturation process gives the wine its depth and complexity.
The vineyard from which Amantiglio comes is located on the hills of Imola, at an altitude of 125 meters above sea level.
The medium-textured clay soil and southern exposure create an ideal environment for growing vines.
Planted between 1967 and 1994, the vineyards are trained using the spurred cordon system with a density of 2200 plants per hectare and an annual production of 40-50 quintals per hectare.
This environment favors the production of high-quality grapes, which gives life to a structured and aromatic Sangiovese.
Amantiglio pairs perfectly with red meats, cured meats and mature cheeses, enhancing every flavour with its richness and complexity.
