Our Trebbiano is produced by harvesting organic grapes from vines planted since 1975 in the second or third week of September.

Harvesting is done by hand, selecting the best bunches in the vineyards certified to date in organic farming.

Our Trebbiano is grown with very low yields per hectare, as in the best tradition of hillside viticulture. This is to extract the best of the minerals and limestone that this vine can offer. Our Trebbiano is strictly bottled as a still wine, to leave room for all that the structure of this wine offers.

Vinification method

The Trebbiano grapes are harvested towards the end of October and taken directly to the cellar for pressing and destemming with a soft pressing on the skins. Fermentation is then started in stainless steel tanks at a controlled temperature of 10-12 degrees. Finally, it is aged in stainless steel in contact with the yeast rinds to then conclude the refinement in the bottle for a further 2 months.

Il nostro vigneto di Trebbiano si trova sulle colline di Imola, in provincia di Bologna, presso la zona dei Tre Monti.

E’ un vigneto collinare che si sviluppa a 125 metri sul livello del mare, con un terreno minerale, con un microclima estivo che permette una buona escursione termica notturna. Il vigneto è sviluppato mantenendo un orientamento a ovest per massimizzare l’esposizione dei grappoli al sole. E’ un terreno ideale per la coltivazione della vite di Trebbiano che daranno vita a vini freschi.

Gastronomic combinations

Trebbiano is the ideal white wine to be tasted in combination with white meat dishes, or with fresh cheeses. Try it as an aperitif.
