Cabernet Sauvignon from organic farming is produced using vines planted from 2001 to 2013. Our grapes are selected during the pruning phase by pruning with very short spurs, which allows us to produce few bunches per plant.

Vinification method

The Cabernet Sauvignon is harvested mechanically and taken to the cellar for pressing and destemming. Subsequently, fermentation is started in stainless steel tanks with maceration on the skins for 15 days. It is then aged exclusively in stainless steel and vitrified concrete barrels.

Characteristics of the terrain

Our Cabernet Sauvignon vineyard is located on the hills of Imola, in the province of Bologna, in the Tre Monti area. It is a hilly vineyard that grows 125 meters above sea level, with a medium-textured clayey soil, typical of our area. The vineyard is developed to the south with an excellent exposure to the sun, like all hilly vineyards. extract.

Our Cabernet Sauvignon is a red wine that goes perfectly when tasted in combination with aged cheeses. Excellent even if tasted in combination with game dishes.
