The “Vetropaco” is our Albana refermented with the Ancestral Method: where the second fermentation takes place with the refermentation in the bottle.
The grapes, for this wine, are harvested at a later time to guarantee the maximum aromatic expression of the skins and the characteristic scent of the secondary hints.
This wine has a fine perlage, as the alcohol content does not allow for very pronounced bubbles.
It is always advisable to turn the bottle upside down at least twice before consuming it.

Vinification method

Late harvest exclusively by hand. Crushing, inoculation of indigenous yeasts and maceration in stainless steel for 7 days. The racking is carried out with the presence of a sugar residue that will allow the refermentation in the bottle. In the years that allow it, we let the bunch be attacked by botrytis.

Altitude 125 a.s.l., clayey soil, southern exposure. Age of the vineyards: 1972-1985
