Description

Montù is a vine grown in organic farming and is produced using vines planted from 1982 to 2015.

This wine to be rediscovered, perhaps with a more Bolognese tradition, can be a good alternative to pignoletto among our sparkling wines. Certainly less aromatic than pignoletto but with its flavor, and some spicy notes, they stimulate the palate as only the best sparkling wines can do.

Vinification method

Our Montù is harvested in the second week of September both manually and mechanically. As soon as the grapes are in the cellar, they are crushed and de-stemmed with subsequent soft pressing on the skins. Fermentation is then started in stainless steel tanks at a controlled temperature (10-12 ° C). Then there is a refinement in stainless steel barrels with subsequent sparkling process using the Charmat method inside an autoclave with rigorously selected yeasts at a pressure of 2.5 bar. Finally, the refinement is concluded in the bottle for 2 months.

Characteristics of the terrain

Our Montù vineyard is located on the hills of Imola, in the province of Bologna, in the Tre Monti area. It is a hilly vineyard that grows 125 meters above sea level, with a medium-textured clayey soil, typical of our area. The vineyard is developed maintaining an orientation from north to south to maximize the exposure of the bunches to the sun.

Gastronomic combinations

Our Montù is a sparkling white wine that is excellent when tasted in combination with dishes based on white meats and cheeses.
