Our Sangiovese di Romagna is produced using the vines with organic certification in our farms planted between 1968 and 73. They are harvested exclusively by hand between the last week of September and the first of October in order to find the best sensory structure that grapes can offer.

Vinification method

Once the Sangiovese grapes arrive in the cellar, they are crushed and destemmed. Subsequently, fermentation is started in stainless steel barrels with a maceration on the skins for 15-20 days. It is then aged in stainless steel and vitrified concrete barrels and then completed the refinement in medium-toasted second-third passage barriques.

Characteristics of the terrain

Our Sangiovese vineyard is located on the hills of Imola, in the province of Bologna, in the Tre Monti area. It is a hilly vineyard that grows 125 meters above sea level, with a medium-textured clayey soil, typical of our area.

Gastronomic combinations

Sangiovese Superiore DOC is a very structured red wine, also suitable for tasting alone as a meditation wine. Excellent if tasted in combination with red meat dishes, game, grilled meats. It also goes perfectly with dishes of cured meats or aged cheeses.
