The grapes of Grechetto Gentile (Pignoletto) come from vines planted between 2000 and 2011, currently in organic farming. Now the most classic of sparkling wines that cannot be missing in the production of a winery in the province of Bologna.

Vinification method

Our Grechetto Gentile grapes are harvested manually and mechanically in the first week of September. Once harvested, it is crushed and de-stemmed with subsequent soft pressing. Subsequently, the fermentation is started in stainless steel barrels at a controlled temperature (10-12 ° C) .Then it is aged in stainless steel barrels keeping it in contact with selected yeast rinds. The sparkling wine is then made using the Charmat method in an autoclave with selected yeasts at a stable pressure of 2.5 bar. Finally it is aged in the bottle for a further 3 months.

Characteristics of the terrain

Our Grechetto Gentile vineyard is located on the hills of Imola, in the province of Bologna, in the Tre Monti area. It is a hilly vineyard that grows 125 meters above sea level, with a medium-textured clayey soil, typical of our area. The vineyard is developed maintaining an orientation from north to south to maximize the exposure of the bunches to the sun. It is an ideal soil for the cultivation of the Albana vine which will give life to fresh wines full of extract.

Gastronomic combinations

Our Pignoletto is a wine to be considered throughout the meal. Ideal if tasted in combination with first or second courses based on fish.
